About 1200 x 630
1200 by 630 belongs in the og:image tag even though almost nothing renders it at 1.91:1 exactly. Facebook and LinkedIn come closest, X trims the sides toward 2:1, Slack and Discord shrink it into a short strip beside the title, and iMessage pads it. The design has to survive all of that, so put the headline in the middle 60 percent of the width and never rely on a logo sitting in a corner.
Link images are read at thumbnail size more often than at full size, which is the opposite of how they are usually designed. A card in a Slack channel is about 360 pixels wide, so type below roughly 40 pixels on the 1200 pixel canvas turns to grey texture. Three or four large words beat a subtitle every time.

Either. 1200 by 630 is the figure in Facebook's documentation and the one most site templates ship with; 1200 by 627 is LinkedIn's. The two differ by 3 pixels of height, which no scraper distinguishes. Use 1200 by 630 for og:image and reuse the same file.
X renders large summary cards nearer 2:1, so it trims about 5 percent from the left and right of a 1.91:1 image. Anything within 30 pixels of either edge can disappear. Centre the subject and one file still works everywhere.
